Dan, also check with your local health dept. Here in Illinois they offer two day courses that will get your sanitation license. Me and my wife took the course at our local community college and felt we learned more in the 8 week course then we would have in a 2 day cram course. Dan have you checked out the community colleges by you? I got my servsafe and NYC license thru Kingsborough Community College here in Brooklyn

I'm not a bbq business owner yet, just an organizer of NYC's only bbq contest Grillin' On The Bay. I do have my NYC food handler's license, so catering is in my future.

I started with the local SBDC...Small Business Development Center out of the local university in Orlando Dan. I HIGHLY reccomend their classes to answer some of the questions you have below...the other people I would go speak with is your attorney and another caterer that is not in your local area (ie...one that does not consider you a competitor) That's kinda how I came out of the gate with Sweet Life Sauce Company to get the cloud cleared...then it's just hard work to get it up and going.

So I have a partner in grilling and we're thinking about going into the catering biz. That said, I have no clue what that entails in terms of health code, insurance, marketing, overhead, etc... Anyone know a good starting point for me where I can go and start researching all of this?
